I guess that cat <filename>|sort only sorts the output of the cat command and does not sort the file itself
You are a good teacher. I am watching the series in chronological order.

I do not get this, in 3:43 you type cat ~/my_stuff/my_dogs with no .txt at the end and cat still returs you the contents of the txt file. My Raspiban returned an error if I do it with no .txt at the end.
