Were this a doable thing, people woulda been doing it for ages. As is, there's a few problems with this harvest method.

1. Each leg takes 3 or 4 molts to grow back fully
2. A lost limb is still a massive health hazard for the crab, so forget about plucking more than one

THIS IS THE EXACT SAME QUESTION I ASK MY BIOLOGY TEACHER.

I remember reading a book about the sea, and i ask my teacher this infront of my class in 5th grade. I think at that point, my class knew who was the weird nerd that time. I even ask him, since crabs have average 2-3 eggs that reach maturity, you need approximately 366 crabs for a year (since for crabs to lay an egg you need a pair of crabs, so minimun of 183 pairs). You also need to breed every each pair with a day difference. With that you can eat crabs forever.

This is already how crab legs are harvested. A quick search shows that this is standard for Florida Stone Crabs. Claws must be above 2.75 inches long to be harvested.
