Ingredients for Easy Pumpkin Cake:
►2 cups all-purpose flour
►1 1/2 cups granulated sugar
►1 tsp baking soda (sifted to get rid of lumps)
►2 tsp baking powder
►2 tsp cinnamon
►3 large eggs, room temp
►1 cup oil (extra light olive oil, vegetable or corn oil will work)
►1 can (15 oz) pumpkin puree

Ingredients for the Cream Cheese Frosting:
►1 package (8oz) Cream Cheese, room temp, cut into quarters
►1 stick (8 Tbsp) unsalted butter butter, room temp
►1 cup powdered sugar
►2 tsp real vanilla extract
►Pecans to decorate, optional

One of our church member turned 80 today and he requested one of us to bake a pumpkin cake for his special day as his wife unable to do that for him due to her medical condition. So I searched on YouTube and found this video with very simple recipe and it turned out to be very beautiful cake. He loved it and everyone at church loved it. Made this for my amazing boyfriend, pumpkin cake is his favorite. I was extremely nervous making this since I have never baked before. Let's just say my boyfriend and family completely loved it! He was so happy since ate half of it in one seating lol thank you!

Hi Natasha.. I have this very same recipe, only it's baked as a bar, in an 11 x 17 pan. I top it with coconut. Hubby used to take it for his potlucks at work.. Everyone wanted the recipe! You can't go wrong with this one! I'm going to whip this up tonight.. It's so easy to make! Thanks for reminding me that it's time to make this recipe again!

Here are the ingredients in metric systeme

Ingredients for Easy Pumpkin Cake:
250g all-purpose flour
300g granulated sugar
1 tsp / 6g baking soda (sifted to get rid of lumps)
2 tsp / 10g baking powder
2 tsp / 5.5g cinnamon
3 large eggs, room temp
215g / 235mL oil (extra light olive oil, vegetable or corn oil will work) OR butter
425g pumpkin puree

Ingredients for the Cream Cheese Frosting:
225g Cream Cheese, room temp, cut into quarters
115g unsalted butter butter, room temp
120g powdered sugar
2 tsp / 10g / 10mL real vanilla extract
Pecans to decorate, optional

Bake at 180°C
