The most flavorful MINI PUMPKIN CHEESE BALLS using Hi Note's CHEEZIO PEPE 🎃🧀 . Founded by chef Roy Choi and my dear friend Cooking with Coit, CHEEZIO PEPE is a great alternative to using a processed French Onion Soup Mix (a classic cheese ball ingredient). Instead, CHEEZIO is made with only 7 ingredients (no fillers) to make a much better and tastier 🧀 ball. Beyond using it to create an amazing plant-based pasta, I’ve also seen it used to flavor wings, fries and vegetables. Highly recommend!
Full disclosure, the pumpkin cheese ball that went viral last month was gorgeous but was purposely made plain to give room for all your favorite flavor combos. With just 3 ingredients (CHEEZIO PEPE, cream cheese, & cheddar cheese) plus decoration, you can make the tastiest mini version for your guests. The best part? You can make it in advance and serve when ready (my favorite quality for any holiday recipe).
MINI PUMPKIN CHEEZIO BALLS
(makes 20 mini balls)
INGREDIENTS
16 oz cream cheese, softened
1 packet @hinote’s CHEEZIO PEPE
1 ½ cups cheddar cheese, thinly grated
10 Pretzel sticks, cut in half
20 small parsley leaves
20 Butter crackers (optional)
INSTRUCTIONS
1️⃣ Add the cream cheese and Hi Note Cheezio Pepe to a medium bowl and mix together with an electric mixer until evenly combined.
2️⃣ Cover and chill in the refrigerator for about an hour.
3️⃣ Use a tablespoon measuring scoop to portion the cheese mixture, then roll into a ball and set on a plate. Continue until all of the cheese mixture is rolled into balls.
4️⃣ Add your grated cheddar cheese to a small plate. Roll each of the balls in the cheese and set aside.
5️⃣ Use a toothpick to make marks up the side of each ball and across the top to achieve a pumpkin look. Place half of a pretzel stick into the top center of each mini cheese ball, then garnish with a small leaf of parsley.
6️⃣ Refrigerate until you’re ready to serve. NOTE: if you plan on serving more than an hour later, save adding the pretzel and butter cracker for right before you serve, as they will get soggy in the fridge.
