Tanghulu but with 20% effort

Cooking doesn’t need to be hard or complicated. Often, you're simply looking for a recipe that gets you most of the way there with minimal effort, hence 80/20.

Today we’re 80/20ing Tanghulu. Normally, the syrup is prepared over a stovetop in a pan, and requires large amounts of water and sugar, but a microwave allows you to quickly make a small batch that is perfect if you’re just looking to try a few.

For the syrup, you can either go with a 1:1 or a 2:1 ratio of sugar and water, personally I prefer the 1:1 to use less sugar, but the 2:1 ratio should provide a harder sugar coating that will crack better for tanghulu, and it’ll also microwave in a shorter amount of time (~30% less time!). Also, DO NOT STIR the mixture because it will cause the sugar to crystallize.

For a 1:1 ratio I’d recommend microwaving for an initial 3-4 minutes and then do 1-2 minute intervals for a total time of about 8 minutes. And for a 2:1 ratio, I’d recommend initial 2-3 minutes with only 1 minute intervals for a total time of about 5 minutes (your mileage may vary).

And to know when it’s ready, a lot of people say it’s when it starts turning amber in color or when you start to see the sugar thicken and bubble. In my experience, eyeballing always ends with chewy or burnt sugar, so I would definitely recommend using a digital thermometer! 300F or 149C is the temperature to hit 🎯

Isn't heating sugar in the microwave like ridiculously dangerous because the sugar overheats and literally could burn your skin off??
