Homemade noodles with a flavoursome and gelatinous chicken broth made from the famous Poulette de Racan from Loire, topped with perfectly cooked, shredded sous vide chicken breast marinated with seaweed and Chinese cabbage for some extra sweetness.

I love chicken noodle soup, or noodle soup of any kind, and I asked myself, if I had all the time and resources in the world, how would I like to cook my ultimate chicken noodle soup. This is my latest attempt and by no means how I cook it every day, but I thought I'd share.

I made the broth last night. I used a premium chicken from a farm in my village. I couldn't find kombu so I skipped it. My broth turned out delicious! I learned how to mince the green onion from this video. Thank you chef Evan!!!
