You can farm the tunnel that has meteorite of astel in the consecrated snownfields. I think it's called anyx tunnel? You can get 6, 7, and, 8 somber stones from the minors. Also, the haligtree nights have a chance to drop 7 for sure. Beating giant too early can screw your playthrough up by being locked out of npc quests

You can farm somber 7 smithing stone by church of repose by the 2 hands in the back behind the church they will drop them unlimited amount

A level 1 Wretch can level up Arcane to 12, grab the faith boosting talisman, get the spirit bell, grab the 2 Dectus Medalions, go to Carian Manor, do the Loretta Cheese strat, start Ranni's quest, set a site of grace in Altus, warp to Greyoll, walk to the Radahn teleporter, kill Radahn with rot and summons, go to Ranni's Rise, get the Inverted Carian Statue, do the tower, run past Godskin Noble, grab what you need, warp back to Ranni, go to Ainsel River, and rot away the Baby Astel, and you can get the Sobmer Smithing Stone 7. EASY.

You can get an 8 in Gael Tunnel in Caelid

If you want to find somber smithing stone 7 then go to the shunning grounds in leyndell. There’s a bunch of them but you’ll have to fight the giant lobsters

You could go to the tower with the teleports, take the first one, then you end up on a small island before this end game island.
If you travel at the roundtable hold and close the game at the exact timing before it completes youll spawn at the late game island. Not sure if it still works though

Or just wrong warp there on lvl 1. It's also a guaranteed drop from the hanging ant thing in Ainsel (the second one)

you can take 1 early game, killing falling star beast on selia hideout, and caelid have 2 scarab with somber 8 and somber 9, you can make a lv 9 weapons with 1 hour game.

Somber 7 is very farmable. The wiggle finger hands in the mountaintops of giants by the heros grave drop somber 7s

Farm sober 7s at the patch of small spiders near the last site of grace before the fire giant

You can do a glitch to get to crumbling Farum Azula without killing anyone btw, so the hardest one to get in somber 3 bearing
