Succulent? Crispy? Moist... yup! You've heard of La Caja China for roasting a whole pig, but have you ever seen a pig box used to cook a whole lamb? Step-by-step, from prep to marinade, to the entire cook! Hands down, this is the best way to cook lamb!

1 bottle of Wine, preferably a sauvignon blanc.
The juice of three large Lemons
⅓ of a cup or 80 ml of Celtic sea salt:
¾ of a cup or 180 ml of brown mustard
⅔ cup or 160 ml of fresh minced garlic
¼ cup of 60ml garlic granules
¾ cup or 180 ml of Greek Oregano
¼ cup or 60ml Black Pepper
1 cup or 240 ml of a quality olive oil
½ pound or 225 grams of a quality salted grass-fed Butter.

For those of you considering the Box I suggest a Thermoworks Square Dot thermometer. It is two probe. One for the meat and one that averages the internal temperature inside the box so you can remove coals if the temperature is getting too hot or add coals if the temperature is getting too low. Not knowing the temperature inside the box is fraught with peril resulting in a lot of wasted time.

Very interesting, wasn't aware of that device.
Two questions,
Does the smoked flavor come through or is it being insulated in the box?
Also, how does it compare to other methods of slow cooking lamb, like the Cretan ofto/antikristo?

-George, I’ve been aware of the Caja China Box for quite some time & watched numerous videos on the method of cooking a pig.
-Would you consider doing a video on the proper way to roast a suckling pig using this method?
