IMO Thunderbolt is one of the best tech Intel ever made, and then developed in conjunction with Apple. (Thunderbolt share is one of the most overlooked yet useful tech for transfering files between different workstations)

You should try with bunch of 1-100kb files with couple of gb files between, that will make it slower

Single file transfer was never really a problem. Try dropping thousands of small files of total similar size and then see how fast it is?

What is the app that shows you the temperature of different components of the Mac or ram usage?

It might be compressing it because its a .img file it might just be empty allocated space and that would make it super fast to transfer. And example of this is linuxes fallocate in the GNU core utils.
