ETHIOPIAN LENTIL STEW -
1/2 yellow onion minced
4 garlic cloves minced
1 cup red lentils
1 tomato chopped
4 cups water
2 tbsp berbere spice
Saute onion and garlic in a little water for 3-4 minutes. Add in rest of ingredients, bring to a boil, reduce to simmer and let cook 45 minutes.
