I swap between 2 wheelsets, one for more climbing(36t cassette) and one for general road riding(30t cassette). I usually dont touch my b screw, because the wheels are both DTSwiss hubs, same rotors, all but the cassette. The gap on the 30t isnt that bad as the one in the video, my shifting works well, and so i just dont touch it.

That won't necessarily work for super wide-range cassettes. On those, you have to shift to the second cog and make sure the jockey pulley is barely clears the first.

Actually, that 2mm hex key could be used to set the distance between the cog and chain.

I got a new bike and i wasted 1 hour on limit screws and cable length trying to adjust the rear derailleur wondering why it doesn't shift properly with them perfectly set, till i realised the problem was at the b screw😂

if your derailleur still jumps on higher gear you might need to Shorten the chain only if your chain is long

But bikes don't shift gears to be able to accelerate, torque and the speed you demand are suitable for single gears, unless gradient change which still you change once.
I see the importance for servicing but I dont see the need on a bike to "shift fast" since its not a car which leverages high ratio gears for off the line acceleration.
