Given how bloody advanced and intellegent they are compared to other monsters, I still think there are lynel villiages and camps outside hyrule. Hell, maybe that is where darknuts went, they fled and became lynel riders.

Tbh Lynels are apparently pretty smart, I mean I'm pretty sure they're the ones who make their own weapons since only they can use them and why would someone make weapons for Lynels? So yeah if you could gain their trust they'd be a pretty great ride

I imagine giving someone a ride on your back, as a four legged animal, could be equated to having a pet on your shoulder, or snuggled in your pocket. It's something about the sense of companionship.
I raised a few squirrels, in my teenage years. I always used to love them riding in my pocket while I just did yardwork.
