This is the method I use, but it gets complicated when you have stems branching off, and/or thin stems. It takes me about 3 hours to get 2 ounces of fresh thyme.

Sometimes it does not work well, because almost always the branches are thin and they shatter.

my stems have tiny xmas trees down the long stem. Makes it hard not to have some stems in with the leaves.

i got fed up trying to separate the stems from the leaves so i just put the whole thing into the beef curry i was making and removed the softened stems after cooking

Run the thyme stem into a colander and pull The leaves will stay in the colander

Why are they showing rosemary? That's an easy one to strip. All those fragile stems (not the center thick one) on rosemary don't strip like that. I leave the thin ones in because I am not insane (and an mot about to get tweezers or something to get them out!)

She's stripping the stems off the main stem. OK I have come to the conclusion that I have been doing it the best possible way for years, and there is no secret to it.

run it against the angle of the leaves in the holes of a sieve or a grater

If you want this to take forever yes do this normal method.

My fingers started getting an allergic reaction for some reason. I didn't think I was allergic to thyme. 🕒😂

Bull----. That only works if you are rich enough to buy perfect, long, straight thyme branches. Real thyme has a bunch of little branches off the main branch, and if you do this, you'll get a ton of that hard, woody branch material in with your leaves
