Yield: 4 to 6 servings

Ingredients

6 Roma tomatoes, chopped
4 garlic cloves, minced
2 seeded and minced jalapenos, plus 2 roasted, skinned and chopped jalapenos
1 red bell pepper, fine dice
1/2 red onion, fine chopped
2 dry ancho chiles, seeded, cut into short strips and snipped into pieces
1 tablespoon olive oil
1 lime, juiced
Chili powder, salt, and pepper, to taste
Fresh scallions, cilantro or parsley, to taste

Directions

In a bowl, combine all ingredients. Place in refrigerator for up to 12 hours for flavor infusion.
Serve with tortilla chips.

Funny, they have the gag at the end where it's a little too hot for Alton, yet he absolutely killed it on hot ones barely breaking a sweat through everything.

I physically crumble under the nostalgia behind this content. I actually remember my teacher saying "I don't like it, but I bet you'd love it because of how 'sciency' it is." She was right, my 5th grade mind absorbed every _syllable_ this man said. I watched plenty of re-runs, ya know.



BTW, if any of you care she was an amazing teacher as far as I remember. In fact, I only remember two things from that grade. Her commenting on Good Eats, and me making her cry by misbehaving while she was pregnant, and watching half the class comfort her while staring daggers at me. It actually haunts me to this day...

Yep, that's what it sounds like...putting in...or taking out as my case was. Capsaicin can linger on your fingertips as long as tools and cutting boards.
