That fourth pic is a Filipino food called Bibingka. It is traditionally made from slightly sour galapong (ground fermented sticky rice), coconut milk, water, and sugar. And is very famous during the ber-months(especially December).

I've seen a schnitzel made using ground up pork rinds that was made for someone on keto. It was more greasy than normal, but it still did the job. There are also different gluten free breads that she could grind up into crumbs to make it. It's more than possible.

Potato starch is gluten free. It works well with Karaage so Schnitzel should too.
