My Memere's (Jeanne Songy Robert’s) Butter Beans with Shrimp published in the Sauté, Cook with Saint Catherine of Siena Cookbook. Memere grew up in Edgard, Louisiana near the Evergreen plantation and lived her adult life in Metairie. Enjoy!

Butter Beans with Shrimp

1/4 cup – oil
1/3 cup – flour
2 medium onions, chopped
1- 12 oz. pkg frozen lima beans or fresh “butter” beans
2 fresh tomatoes, chopped
1 cup shrimp – raw, peeled, deveined
2 qt. water
1/4 tsp sage

Make light brown roux with oil and flour. Add onions and cook for 5 minutes. Add beans and cook 15 minutes more.
Add tomatoes and shrimp and cook 5 minutes more. David’s Note – remove skin from tomatoes.
Add 2 quarts water and cook 45 minutes to 1 hour.
David’s Note – Add sage at this step too. It took almost 2 hours for beans to get soft, so plan on more time than 1 hour.
Add salt, pepper, garlic powder and Tabasco to taste. Serve over cooked rice.
