Kyoya from the Beyblade: Metal Series is a character I strongly feel is inspired by Vegeta. He's an antagonist turned ally focused on surpassing the cheerful main character no matter what's at stake, scoffs at friendship despite being surrounded by those who come to see him as a friend, but who has a secret softness brought out in certain instances and respect for others despite usually seeing himself as the best. I legit watched episodes of the show looking out for his character development and getting Vegeta vibes.

Not comic/animation related but another character inspired by Vegeta is Shadow the Hedgehog: his rivalry with Sonic, his Ultimate Life Form status which sometimes likes to brag about and also according to the official concept art for Shadow (originally Terios) from Sonic Adventure 2 one of his keywords is simply Vegeta.

Zoro’s clash is more with Mihawk than Luffy since Mihawk is the strongest swordsman that he lost to and who he even trained with during the time skip. He had a glow up because of Mihawk, and like Goku and Vegeta, became friends to a degree but still want one last fight to prove who’s better.
