Serves 6

12 oz milk chocolate chips (2 cups)
1 pound silken tofu
2 tsps vanilla extract
¼ tsp kosher salt
One 7-oz container marshmallow fluff (1¾ cup)
9 graham crackers (1 sleeve), crumbled (1½ cups), plus more for a garnish
Mini marshmallows, for a garnish

1. Roughly chop 2 Tbsp of the chocolate chips, then set the chopped chips aside. Add remaining chocolate chips to a heat-safe glass bowl and microwave in 15-second increments, stirring well each time, until the chocolate is melted and smooth.

2. Carefully drain the tofu then add it to the bowl of a blender. Also to the blender, add ¼ cup of water, the vanilla extract and the salt. Blend until smooth, then add the chocolate and blend again until completely smooth (this should give you about 3 cups of pudding). Cover and refrigerate the pudding until it is completely chilled and thickened—at least 2 hours.

3. To assemble the pudding cups, layer ¼ cup of the pudding into each of six 8-ounce heat-safe glass jars (to make layering easier, you can also cut off the corner of a plastic food storage bag and spoon the pudding into it, creating a piping bag). Follow this with 1 heaping tablespoon of crumbled graham crackers in each jar, then 2 heaping tablespoons of marshmallow fluff, then repeat the layering once again with the same amount of pudding, graham crackers, and fluff.

4. To serve, top the pudding cups with mini marshmallows and use a kitchen torch to brown the marshmallows and the top layer of fluff, if desired. If you want to get fancy (and I think you do!), prop a small piece of graham cracker upright on top of each pudding cup, then sprinkle with the chopped chocolate chips.
