Muhallabieh is a milk pudding dessert with ground rice, sugar, milk & orange blossom water. It is noted (according to Wikipedia) that the traditional pudding dessert was introduced to the Arab culture in the late 7th Century by a Persian cook serving something new to an Arab General. He loved it so much, he called the pudding after himself! 🤣

Muhallebieh is served anytime of the year, but in Lebanon, it is special to serve guests visiting the household just after New Years Day. It signifies a blessing for the visitor & their family for a happy & bright year ahead, hence why the dessert needs to be white!

Greatest thing about this dessert, it’s suitable for vegans where the milk can be in almond, oat or hazelnut & gives a really creamy texture like double cream! If you want to cut the sugars, consider replacing sugar with sweetener. The best & safest sugar substitutes are erythritol, xylitol & stevia leaf extracts.

This recipe serves 12 small glass bowls suitable for hot desserts. Ingredients are:
1 cup ground rice - we like TRS brand
1 & 1/2 cups white granulated sugar (or to taste - you can make it sweeter or less sweet)
8 cups milk (dairy or alternative such as almond, oat or hazelnut)
1 tbsp orange-blossom water

In a pan, add ground rice, sugar & milk & stir everything well before placing on the stove. When ready to cook, place on stove over medium-high heat & keep stirring for 5 mins. As milk heats up, rice will thicken - keep stirring. After 5 mins, it’s a thick texture & creates boiling bubble points, lower the heat & continue cooking until the rice pudding is thickly coating the spoon & resembles a thick custard texture. Ladle in small glass bowls suitable for hot puddings, allow them to cool & serve with a choice of toppings such as crushed pistachio, sprinkles, dried fruit & nuts or grated chocolate - if more sweetness is required, serve alongside with honey, syrup or rose syrup/ grenadine. Keep in fridge up to 4 days - Enjoy!

Why does it taste bitter after making it.I made the same recipe many times and it came out perfect but since last two times it tastes bitter
