One huge difference i have noticed is when i take a photo with an over exposed sky, in jpeg the sky will stay a solid white no matter if you bring down the exposure. In raw, you can see the clouds come out with when u bring the exposure down

Disagree. There's more nuance than, "Just shoot RAW"

RAW files have more data in the shadows. But camera JPGs have benefits too, especially for people who are new to photography or photoediting.

Canon and Fuji JPGs look way better straight out of the camera than anything most people can edit unless their goal is to use heavy presets.

And there is a surprising amount of editing latitude in JPGs.
