I love that you've included John and Margaret from North and South in this list. 20 years on and it's still great. Neither lead actor were obvious choices for romantic parts when they were cast, Richard Armitage had yet to break out, and Daniela Denby-Ashe didn't look like a period heroine, and was more famous for her role in a family sitcom. Their scenes sizzle with unspoken passion and I love the journey both characters go on as they find their way to each other.

What I love about Matthew and Mary Crawley in Downton Abbey is that Matthew challenges her. She's used to having men fall all over themselves to impress her, and he NEVER does that. His pursuit of her was mature, respectful, and honest, and he was never going to bother if she didn't feel the same. In the episode with Mr. Pamuk, he leaves the party early because he sees how she loves being the center of attention, and he's not going to waste his time with empty flattering. And then we all know what happens later that night.

Outlander is the only show I know of that actually shows a couple get together within a few episodes of the first season and STAY together for the rest of the show, instead of a stupid "will they/won't they" "on/off" thing that EVERY SHOW does. Bridgerton has the potential to have storylines revolving around people in healthy relationships, since each season is about a different sibling, but so far it has been failing on interesting stories for the already married siblings.
