So a few months ago, even though I'm a New Yorker with some of the best Italian cuisine at my fingertips, I felt this random craving to go to a certain well-known Italian restaurant chain and try this soup that everyone seems to lose their minds over: Zuppa Toscana. The verdict? It tasted like bland meat with skimpy veggies in boiled water. I just didn't get what everyone was fawning over. But the idea of this soup felt like it SHOULD taste absolutely amazing.

And so, I vowed It would make a soup of a similar nature that would taste just that: ABSOLUTELY AMAZING.

And folks, after trying this soup, which I am calling Sausage & Spinach Soup (with plenty of potatoes as well), I can fairly say it's not only one of the best soups I've ever created, but one of the best I've ever had in my countless soup-slurping lifetime. It is LOADED with astounding flavor to the point of it being impossible to have just one bowl. And then dipping in some crusty bread? Soup serenity. One taste and you're going to forget that sad chain restaurant stuff immediately.

Just made this wonderful soup. My husband had two bowls and almost had more. I used Johnsonville bulk sausage, so didn’t have any casings to deal with. Also, diced Yukon gold potatoes and regular cream cheese. Took about 35 minutes from prep to bowls. Thank you for a great, easy, fast, and Souper tasty recipe.

This literally is the best sausage soup I've ever had. Perfect for a fall/winter evening but I'm craving it right now in mid August. I'll be going to the market tomorrow to get the ingredients to make it again.

Another great recipe thank you x We don’t have Italian sausage in the UK so I added fennel seeds and chilli flakes to the regular sausage meat. I loved it thank you. My lunches for this coming week all sorted!

Just made this and oh my! My family loved it! I used chicken Italian sausage. I substituted kale for the spinach. I also couldn’t find the boursin cheese(all sold out because of the holidays) so I just used a garlic and herb cream cheese from another brand and it turned out great! Thank you!!

made this. Talk about in heaven. Best part my picky children are on their second bowls. I didn’t use sherry and I sprinkled shredded Italian cheese blend on top with a big chunk of garlic French bread. Definitely adding to my book of recipes, thank you!

first time making your recipe in the instant pot. I always make it in a dutch oven, but starting to watch your instant pot recipes. came out wonderful. Always put Boursin garlic cheese in it. game changer!! very good. I used about 8 oz spinach. love it!!
