A pantry video is how I stumbled on Beaky. At the time I thought this lady is crazy! Who is doing all this work and she’s my age! I already had a garden, so naturally I kept watching. Can you believe I’m now pressure canning my own food! I had a canner a year before I started watching your channel and had never opened the box. You proved to me I can do it! My mother died when I was 11 and my grandmother had dementia by the time I could join her in the kitchen . They both cooked and canned. Thanks for helping me get closer to them and for teaching me what they couldn’t. I wish you nothing but love and happiness!

Dear Becky, Most people don't realize that fruit trees have a low productivity year after a high productive year until they try to rely on their own trees (or local) for self sustainability. It is normal. I plan my fruit canning (apple sauce, butters, etc) to make enough for 2 years to follow the natural process. Then I only have to supplement with outside sources if available when those bad weather/bug years hit which can happen to anyone or any area.

Becky, my grandmothers were homesteaders before the term became popular. They canned and preserved food. When the canning jars were emptied and cleaned they filled all of them immediately with water. They did not have the plastic water bottles and when they water source froze on the farm they always had a water supply at the ready.

Instead of buying water in plastic bottles you can can water in your jars. It keeps and is good to use for cooking, drinking and sterile for using to clean wounds. Great to have on your shelves

Hi, I'm from Romania and I follow you with great love. We use to keep eggplant in the freezer and it is one of the most loved appetizers here. Eggplants are picked when they are young and do not have many seeds, they are cooked on fire, not just hot coals, let them touch the flame, they are peeled, drained and kept in the freezer. It is prepared like an eggplant salad, basically it is finely chopped and mixed with a little olive oil and salt. Spread on a slice of bread and sprinkle with onion. They are easy to preserve, delicious. We have several recipes, but this one is very simple and does not change its taste even if it is frozen. If you are thinking of trying new vegetables next year, I definitely recommend eggplant.

I enjoyed this tour - it’s always interesting to see what is going on at the homestead. I buy my sourdough from a local baker, slice it at home, and freeze each slice in its own bag. As an old now single this is perfect for a piece of toast, or for making a small bread and butter pudding. I have found you are right about only giving shelf space to food you want to eat as it saves both space and money.

Hey Becky - quick tip, overripe zucchini is called 'marrow' and it is still edible! It's a quite common vegetable in the UK, and you'll be able to find recipes for marrow easily if you're curious

I put my jars of lard and tallow into an old sock before freezing them. Saves the jars from breaking when they are moved.
