Wouldn't carbon dioxide and water be formed when sugar reacts with oxygen? Why was a different chemical formed?

Henry's law when temperature increases, pressure decreases, solubility of CO2 decreases now left with sugar and water as the temperature increases water will vaporize because boiling point of water is less than sugar and then left with sugar so the black substance formed is due to providing excess temperature 😊
