How to Make Earl Grey Crème Brûlée | Cupcake Jemma

This dessert has it all...a crunchy caramel top under which a silky smooth, creamy custard sits waiting for you to make that first crack with your spoon. And I bet you thought it was too difficult for you to attempt at home. Well I'm here to tell you that Crème Brûlée is a doddle to make and this recipe gives it an extra special twist by flavouring the custard with fragrant Earl Grey tea.

Recipe:

425ml double cream
100ml whole milk
3 heaped tsp Earl Grey tea
5 lg egg yolks
50g caster sugar (plus extra for sprinkling)

PLEASE NOTE: ideally you would use a blow torch and you would be VERY CAREFUL! But if you don't have one you can get the same results on top by setting your grill/broiler to max heat and sticking these guys under that for a minute or two

Hi Jemma! A trick to remove those bubbles are to actually torch them slightly before baking them! Its how we do it in restaurants! Another to reduce the amount of foams or bubbles is to let the mixture rest overnight in the fridge. The bubbles will dissipate overnight and just ladle or portion them and bake then at a low temperature. Normally around 90c or 100c depending on your oven for about 2hours or so until done! Thats how we get a smooth top and all over creme brulee with no bubbles!

I had an Earl Grey crème brûlée at a restaurant called Bumbles in Victoria, London, about 10 years ago. It was the first time I'd ever tried it and was so delicious it's one of those desserts I still remember eating to this day

Tried making it and it's super delicious! Even my boyfriend, that rarely cooks, made perfect brulee :) We did heat the water before pouring it into the pan, because it took a lot longer to bake with colder water.
