Chef Ramsey is a perfectionist. But he tempers his expectations in relation to your expected skill level. You come into hells kitchen as a chef in most cases. You are vetted and have shown that you have the skills. So Ramsay's expectations are high. Then look at masterchef and masterchef Jr. Your just raw talent. So he is way more forgiving at the beginning because they are at the beginning of their culinary journey.

Ramsey was asked in a interview once if his anger and insults were real or just an act. He said, "Let me put it this way, when a drill sergeant yells in a recruit's face is it real or an act? Probably a little of both, but it's done for a very important reason, to see how they'll follow orders and handle extreme pressure. So do I yell and call my wife a donkey if she burns the toast? Of course not, but a restaurant kitchen is very high pressure, high stress environment, and prospective Chefs need to learn that as fast as possible."

I believe it was Hell’s Kitchen Season 8 Episode 2, the blue team lost dinner service, so instead getting kicked out of the kitchen, Chef Ramsay escorted them to the door, kicked the door open, and then kicked them all out.
