It really is pretty simple. Our Galaxy is moving in a diametrically opposite direction from the disappearing stars/galaxies. The combined speeds of the two directions exceed the speed of light and when that happens those other stars/galaxies simply wink out of our visible universe. The same then happens to us and our surrounding stars to those which winked out for us.

Of course, expansion could be responsible for those stars, mentioned early in the vid for disappearing, in addition curvature shouldn't be discounted too?!
