Videos like this do not get people killed. She follows excellent instructions.
I have followed these instruction for years and as long as the vacuum holds and you follow the rule if the seal goes bad, they smell bad, look bad, spurt on opening it is safe. Why can instead of freeze anything. Longevity, shelf stable foods for your family. What do you do when the power goes down in a storm that does not come back in a few hours? throw it out. Wasted food, lost money. Because something is not recommended does mean it cannot be down with knowledge and care. It does not mean it is not safe. It means they have not tested it, or tested it and many seals fail, or simply thought the quality was poor. Or the texture was not like fresh bacon. Which it is not. But like any other meat it can be canned safely and there is good reason. I for one cannot afford the # of freezers to hold what I store living in the boonies we can be stuck here by weather for weeks at a time. A bad storm or economic or political event can cut us off from supplies. The first step in being self sufficient is thinking ahead.

I've canned a bunch of bacon, but I used the 1.5 pint jars. They still have the wide mouth, but they have a straight wall and are easier to pack.

I canned bacon per your video instruction about a month ago. It was SO easy. Last weekend we opened a jar and I fried it up for breakfast and it was delicious. Thanks so much for all you do here. I enjoy all your videos and have learned so much.

Thank Goodness for preppers like you. Knowledge is power. There is nothing better than independence and in my opinion this country needs to learn these things. Being self sufficient is freedom! Thank you for sharing and God Bless. I’m canning whole butter right now. Bacon and Butter definitely two of the “gotta haves”

I am opening a jar every year to see just how long it lasts. I'd expect it to last at least 5 years but hopefully 8 years like all the other meats. Blessings!

If u precook to a light crisp then roll in parchment paper the bacon comes out like bacon not like fat

Years ago my mother taught me the art of canning and as of lately have gotten back into it. I'm leaning more all the time. Never thought you could can bacon. This is just plane cool. Love the video. Great info.

I'm figuring that I'm gonna have to feed about 20 family members that you know will just show up if shtf. Really makes it tough to keep rotated but we eat what we store so that makes it so much easier. Blessings!

I used thick bacon and had the same results as thin pretty much. Your best bet is to bake the bacon for serving it really tends to stay together best that way. 350 for 20 minutes. Blessings!

I canned some bacon in the 1-1/2 pint jars a few weeks ago after watching your video and they turned out great. I decided to try a suggestion by another Youtuber to partially cook the bacon first. I did some last night and it turned out well. You can fit a pound inside a pint jar, less bacon fat too. Thank you.

Hey Bear! I am canning bacon today..I am doing it in Canadian sized Pint jars..so I will can it at 10 pounds for 75 minutes...I managed to get 3/4 of a pound per 2 cup pint jar! Will keep you posted!

@FireFighter0254 No oxygen left inside the pressure pushes it all out and your left with just space. Sometimes the meat above the liquid level looks darker but it doesn't change the taste. If it bothers you just flip over your jars a little bit before opening and it will all look the same. Blessings!

You can cut them in half and use a pint jar to reduce the quantity.usr like any other cooked food after opening must be used or stored appropriately. Blessings!

The bacon will soften when processed and will give you the headspace required. You are canning raw pack so there are no trapped air bubbles. In hot processing trapped air can cause that area of the product not to heat tobthe proper temperature. Blessings!
