Upside-Down Banana Bread

Here is what you'll need!

Servings: 6-8

INGREDIENTS
4-5 ripe bananas
3 eggs
½ cup oil
½ cup granulated sugar
1 tablespoon ground cinnamon
2 cups flour
½ cup butter
1 cup brown sugar
2-3 bananas, sliced
Vanilla ice cream

PREPARATION
1. Preheat oven to 350°F/175C
2. In a large bowl, mash the ripe bananas.
3. Add the eggs, oil, sugar, and cinnamon, mixing until evenly incorporated.
4. Add the flour and mix until the batter has no large pockets of flour. Set aside.
5. In a pot over low heat, melt the butter, then mix in the brown sugar until dissolved.
6. Bring up the heat to medium, cooking until the mixture starts bubbling.
7. Remove the caramel from heat and pour into a greased 9x9 baking pan.
8. Lay the banana slices evenly on top of the caramel.
9. Spread the banana bread batter on top
10. Bake 40-50 minutes.
11. Cool until the bottom is barely warm and use a knife to loosen the edges from the pan.
12. Place a plate upside-down on top of the pan, then invert the pan, flipping the banana bread onto the plate.
13. Slice, then serve with vanilla ice cream.

If anyone is still checking out this recipe, I just made it taking into account all the comments. First, YES! you HAVE to grease your pan. Second, when making the caramel, let the sugar melt in the pan BEFORE adding the butter otherwise if your sugar doesn't properly melt you'll end up with a runny mess. And you need to add a TBS of milk right at the end for true caramel. Use about 1/2 cup less flour and add 1/2 tsp each of baking powder and soda. My bread rose nicely and moist, and the caramel was nice and gooey and clung to the bread and not the pan.

I tried the recipe after reading a few reviews. tweaked it slightly by doing one cup of self rising flour and one cup of regular flour I also reduce the amount of caramel sauce that I used and it came out perfect

For those of you who are gluten free- use gluten free Bisquick instead of flour!!! Turned out absolutely delicious and really fluffy, like a giant muffin.
Regular Bisquick could also be a solution for those of you who didn't like the texture/density by using just flour.

think I drooled a bit. Best part? I can just replace the flour with gluten free flour and then my mother can have some too! Perfect.

This is so good! I made this with my parents for my family and it turned out amazing. We had a difficult time figuring out how to make the carmel since it was hard in some places but too liquid-y in some places. However the bread pudding part was so fluffy and had a great consistency.

pro tip add two teaspoons of milk to your caramel while its cooking. also if you haven't made caramel before you have to stir that the whole time its cooking or it will burn. Also you can halve this if you only want to make it for 8. This makes way more than eight servings.
