Besides not being able to digest, grass also contains silica to protect itself. It’s basically sand and will grind your teeth to bits. Ruminants tend to have ever growing teeth. Humans have just the one.

Tl;dr: If you eat grass you will soon become unable to eat

We can eat flowers and clovers as well. I live in the Country, we have had dandelion greens and sweet clovers right out of the lawn, they used to candy flowers to put on cakes in the Victorian Era.

I think it has more to do with fixed mental categories. When someone asks why we don't eat grass, they're thinking of the leaves and stems of common lawn grass, which is ornamental and kinda worthless, not the wide variety of grass *seeds* that we DO eat.

It's a lot like asking why we don't eat trees: We do, but much like grass, the parts we eat are generally the fruits, seeds, or flowers. We tend to think of those as separate from the tree itself. If you told someone "I eat trees, " they would probably imagine you gnawing on wood, not snacking on walnuts and apples. It's kind of interesting to see how we mentally disconnect plants from their products.

Most people do eat grass.... every day.

As he said... Wheat is a grass. Corn seems to technically be a grass, but it's a bit different from others.

Barley, Rye, Spelt, rice, oats, etc etc grains are mostly grasses.

It's pretty crazy if you think about it. I have Corn and Barley straw with seeds that regrow the barley grass and then grow pods at the end. It looks like I have a bunch of weeds in my bed with this giant amount of grass, but I'm making more free straw for myself to use as mulch.

Fun thing: most mammels that eat grass, don't eat it directly. They put it in a special stomach where it ferments. Then the animal regurgitate the fermented grass, and now when it swallows it, it goes to their normal stomach, where they digest the germs and the broken down parts of the grass. This way they can access much more of the nutrients much easier.
