Popcorn mousse recipe:
A big handful of caramelized popcorn
100g milk
100g cream
60g egg yolks
55g sugar
3g gelatine
200g whipping cream

Place popcorn in a pot with the milk and cream. Heat and let it infuse for 45min. Use a hand mixer to mix and drain to pieces of popcorn.
Whip yolks and sugar together. Heat the popcorn infused cream. Pour onto yolk mixture, mix and place again in the pot. Heat until 83 degrees. Add gelatin and mix before letting it set in the fridge.
Whip the 200g of whipping cream until foamy. Combine with the popcorn infused cream. Use right away in the mousse cake.
Mousse cake then needs to set in freezer for at least 4 hours before glazing.
