I used to work at chipotle. This is right, except for the veggies. In the recipe books there, it tells us to soak the onions, cilantro, salt, and jalapenos (or "macerate" the veggies) in the lime juice for a few minutes before adding to the avocados.

It is actually a combination of lime and lemon juice! They actually have a gallon of citrus juice which is lime and lemon juice premade!

I love how she folded the cilantro twice before cutting. I learned something!

let your red onion sit in the lemon juice for a couple min. It takes out some of that raw onion bite and allows the lime to really shine in the Guac.

I put fresh garlic paste (1 small garlic) and tomato dice too.

Who knew I’ve been making Chipotle guac all along!!! Sometimes I add a tsp or so of olive oil - not sure why, I think I heard about it and tried it.

If you wanna make it identical to chipotle don’t fully cut the onions so there’s just huge chunks in it

I add chopped garlic into mine. I also use lemon juice instead of lime. And I don't use Cilantro.
