Flavor is definitely important when cooking for flavor, but most people probably don't know about what makes annatto oil extremely beneficial to health. Annatto oil contains tocotrienols, the more biologically active form of vitamin E compared to tocopherols. Namely delta and gamma tocotrienols, the most beneficial kinds. They have more vitamin E activity than "normal" vitamin E. Tocopherols alone have the ability to regenerate BRAIN TISSUE in the case of brain damage and brain tissue loss. Annatto is among very few sources of such a high concentration of tocotrienols. Goji berry seeds are another.

In Puerto Rico we make this oil and mainly use it to give some color to our foods

In Brazil the seeds are called urucum and we mainly use it in powder form for its color.

in brazil we call it urucum when in seed form and colorau when powdered
it really doesnt have a stong flavor but it gives a real nice color to everything you cook
some people even use it as body paint
