Snow at the Cabin | Winter Life in Alaska

Winter life in Alaska is a busy season, from ice fishing to keeping up with snow removal around the cabin. With the continued blustery weather outdoors, we spend a day indoors making savory homemade chicken stock to replenish our supply. For dessert we whip up a delicious coconut and spaghetti squash custard pie.

~ Coconut Spaghetti Squash Custard Pie Recipe ~
Filling:
1 large Spaghetti Squash (or 2 cups flesh cooked and strained)
14 oz can of coconut milk
1/2 cup half and half
4 eggs
1/2 cup sugar
1/3 cup cornstarch
1/8 tsp kosher salt
1 tbsp butter
1 tsp vanilla
1/8 tsp cinnamon

Pie Dough:
1 1/2 cups all purpose flour
6 tbsp butter (or a few heaping spoonful's of lard)
1/8 tsp kosher salt
5-6 tbsp cold water

We live in Switzerland and i really never liked the cold or the snow that much (unless skiing you know). Especially since we have kids, i always felt like winter weather just ruined our outdoor plans (we are very outdoorsy). Ever since i watch your channel i started loving and appreciating winter and any weather really. You guys never seem to let the weather getting in the way of your fun..now, when its raining, i say no problem, put on your rain pants and jump in the puddles...snowing and freezing? snow suits on, winter walkies with our dogs, snow angels, collecting fallen pine cones...as long as youre dressed appropriately, its always fun.🥰
