So valentines day is right around the corner, and although I won't be doing anything for it, I thought why not conjure up some delicious, quick and easy treats to make on Valentines day!

Heart Shortbread:
Ingredients
Biscuits
– 125g butter
– 60g caster sugar, plus extra for sprinkling
– 175g plain flour, plus extra for shaping
Decoration
– 75g dark chocolate
– 75g white chocolate
– Sprinkles
Method
1) Pre-heat the oven to 190C/180C Fan/375F
2) Cream the butter and sugar together until smooth
3) Mix in the flour till you get a smooth paste
4) Lightly flour the work surface and turn the paste onto it – rolling out till its 1cm/1/2 inch think
5) Cut into your desired shape – I obviously did hearts – sprinkle with some extra sugar, and chill in the fridge for 30 minutes
6) Bake in the oven for 15-20 minutes and until pale golden/brown – set aside to cool
7) Melt the chocolates separately in the microwave in short bursts or over a bain-marie
8) Dip the biscuits into the chocolates, place on a baking sheet and sprinkle with any decorations – leave to dry.
Red Velvet Truffles:
Ingredients
1 ¼ cups flour
1 cup sugar
¾ tablespoon cocoa
½ teaspoon salt
½ teaspoon baking soda
1 egg
¾ cup oil
½ cup buttermilk
½ tablespoon vinegar
½ teaspoon vanilla essence
25ml liquid red food colouring (less if using gel colouring)
200g cream cheese
300g + 170g coloured candy melts
sprinkles for decoration
Preheat oven to 180°C. Grease a 20cm/8inch cake pan.
Lightly whisk the eggs in a medium-large bowl.
Add the remaining liquid ingredients and mix together with whisk or whisk attachment on an electric mixer until blended.
Sift the dry ingredients into the wet ingredients.
Mix on medium-high with an electric mixer for about a minute or until completely combined.
Pour the mixture into the prepared cake pan and then drop the pan on the counter a few times to release any air bubbles.
Bake for about 30 minutes or until a skewer inserted into the middle
of the cake comes out clean.
Remove from the oven and cool for 15-30 minutes before removing the cake from the pan and cooling completely on a wire rack.
Crumb the cake into a bowl, then mix though the cream cheese.
Roll tablespoons of the mixture into balls, then place in the fridge for at least 30 minutes to chill.
Place the melts or chocolate in a microwave safe bowl, and melt the chocolate by microwaving it, stopping and stirring it every 30 seconds until it is
smooth.
Dip the cake balls into the chocolate to coat them, if the cake balls start to fall apart, place them back in the fridge (or zap them in the freezer) to chill some more.
Sprinkle over any additional decoration before the chocolate sets so that it sticks.
Valentines Popcorn:
Ingredients
8-9 oz (weight) candy melts, melted
(substitute your favorite color, or chocolate)
300g popping popcorn
sprinkles or nonpareils in your favorite colour
Instructions
Pop the popcorn.
On a large baking sheet or bowl, gently mix in the melted white candy/chocolate into the popped popcorn.
Now for the sprinkles! Sprinkle the sprinkles before melted candy/chocolate hardens.
Gently mix together before candy/chocolate hardens.
Pink Velvet White Hot Chocolate:
Ingredients
625ml milk or a dairy free alternative
275g white chocolate chips
1/2 teaspoon red food coloring
Whipped cream, for topping
Sprinkles, for topping
Directions
In a medium saucepan, combine the milk and white chocolate chips.
Place over low heat and cook, stirring often until the chocolate is melted and smooth.
Stir in the vanilla. Add 1/2 teaspoon red food coloring and then add more until your desired pink color is reached.
Pour the hot chocolate into clear mugs and top with a generous squirt of whipped cream and sprinkle of sprinkles. Enjoy
