Smoked Pork Belly Bites

Pork belly is one of my favorite meats to smoke. This was one of my go to cooks when I was on my keto diet.
All you have to do is trim off any hanging fat as that will burn in the cook. Season your pork belly however you wish but I used kosher salt, black pepper and Holy Voodoo from @MeatChurchBBQ
You want to smoke your pork belly fat side down until it hits an internal temperature of 203 degrees. At that point, I flipped the pork belly over and hit with that apple habanero glaze and let it smoke for another 10 minutes.
Before cutting into your pork belly, be sure to let it rest for at least 1 hour.
