It’s hard to imagine a Loki actually wanting to live in an ordinary human town and work in a fast food joint. Sure, I can see plenty of Lokis giving up the dreams of power and glory willingly- but not magic and generally being an Asgardian/ Jotun. Not completely changing their personality and character. All it might have took was showing that there was more to her undercover life than mundanity. As it is, I dont see this as entirely believeable.
