Taiwanese Popcorn Chicken
Ingredients
- 2 lbs chicken thighs(cubed)
- 2 tbsp soy sauce
- 2 tbsp Shaoxing wine
- 1.5 tbsp sugar
- 1/2 tsp Chinese 5 spice
- 1/2 tsp white pepper
- 1/2 tsp msg
- 2 cloves grated garlic
- 1 tsp grated ginger
- 1.5 cups sweet potato starch
- 1.5 cups Thai basil leaves
Chicken Seasoning
- 1/2 tsp Chinese 5 spice
- 1/2 tsp white pepper
- 1 tsp szechuan peppercorns
- 1-2 tsp paprika or red pepper(powder)
- 1 tbsp salt
Instructions
Chicken Seasoning
1. In a dry pan toast the Szechuan peppercorns until fragrant.
2. Crush the peppercorns and combine with the rest of the seasonings.
Chicken
1. In a bowl, combine soy sauce, Shaoxing wine, sugar, Chinese 5 spice, white pepper, msg, garlic, and ginger.
2. Marinate the chicken for 2 hours to overnight.
3. Coat the chicken in the sweet potatoes starch.
4. Fry chicken at 375 degrees Fahrenheit in a pot filled about 1/3 of the way with neutral oil.
5. Fry the chicken for 5 minutes until golden brown and fry the Thai basil for 1 minute.
6. Sprinkle the chicken seasoning onto the hot chicken making sure to taste it as you season(don’t make it too salty).
Whenever I go get boba, I always get this dish, but if you have time its super easy to make at home!
