Here is a healthy, yummy and yet easy to make breakfast recipe. It's a great alternative if you are looking for something other than a sandwich for breakfast. With beans and a variety of veggies as ingredients, it's high on protein and other nutrients. feel free to toast the bread if you are not a fan of frying.

Ingredients:(stuffing preparation )
Boiled and peeled potatoes-4
Butter-1 cube
Green chilli-1(chopped)
Small onion-1(chopped)
Purple/green cabbage-1tbsp
Beetroot-2 tbsp(chopped)
Mixed bell peppers-2 tbsp (chopped)
Salt-as per taste
Seasoning herbs-2 tsp
Chilli flakes-1/4 tsp
Method:
1.In a pan heat butter then add green chill and chopped onion sauté for a min add purple cabbage,beetroot,mixed bell peppers cook for 2 mins on medium heat.
3.Add mashed potatoes mix well and cook for 5 mins add seasoning herbs,salt chill flakes mix well and keep aside .
Beans(preparation)
Ingredients:
Tinned bake beans:3 tbsp
Small onion-1 (chopped)
Salt as per taste
Butter-1 cube
Method:
1.In a pan heat butter then add onion chopped saute for a min.Add bake beans sauté for a min done.
Brown bread-4(spread potato filling in each)
Ingredients for( topping)
Carrot (chopped)
Purple/green cabbage (chopped)
Mixed bell peppers (chopped)
Green coriander chutney
Herbs seasoning
Beetroot (chopped)
Salt as per taste
Sweet Tamarind chutney
Coriander leaves (chopped )
Brown bread/white bread-4
Butter-1 cubes
Bake beans
Method:
1.In a pan add butter shallow fry bread from one sides for 2 mins.
2.Spread bake beans,tamarind chutney,add topping carrot,purple cabbage,mixed bell peppers,beetroot,herbs seasoning,salt.
3.Put a bread slice over it spread green chutney add seasoning,beetroot chopped,purple cabbage chopped,mixed bell peppers chopped,herbs seasoning .
4.Cut into half and ready to serve with and kind of chutney or sauces.
