Personally I do it this way: first I take a light color, then a darker one and leave the light areas as highlights. I can also use an intermediate color between dark and light (I hope I explained it clearly, English is not my mother tongue xd)

This can go on. I think i saw combos between a few of these before.. blending. Erasing sofly on one side... etc etc. It gets wild. I think the overwhelming feeling comes from the VARIETY

For the highlights you need a new layer and need to adjust the opacity and then erase the parts to give it the lines, but in 3D space to give it that shape and curve :3

Personally I select rectangle-ish slightly round shapes away from the shadows, take an airbrush and make the top of my selection the most opaque (looks really pretty if you pull it off)

Saw something in Scott pilgrim takes off that I call the lightning bolt and it looks pretty cool and unique for the shine on hair. Also I think the band thing only really works for more straight hair like bangs or something.
