This Low Calorie Top Ramen recipe is easily one of my best cheat codes for dieting. Each serving of it has just 35 calories and it’s so, so filling (it’s loaded with fiber). Plus, it tastes JUST LIKE the “real” thing. A lot of people make the mistake of using the shirataki noodles as spaghetti, and they’re awful for that…they’re really only good for ramen.

Also, a lot of people don’t prep the noodles properly. They need to be washed thoroughly. If you do that they don’t have any “weird” flavor. They just take on the flavor of the broth.

Anyway, here’s what you’ll need to make it:

1 pack (226g) shirataki noodles
2 cups (480mL) chicken broth
1/2 teaspoon onion powder
1/2 teaspoon garlic salt
1/4 teaspoon gralic powder
1/4 teaspoon nutritional yeast flakes
Pinch of ground ginger
Pinch of ground pepper

*1 Tbsp salt for rinsing the noodles with - this is done over a strainer with hot water

Macros Per Serving (recipe makes 2)
35 Calories .5g Fat 5g Carbs 4g Fiber 3g Fiber

Here's how I get rid of the taste from the packaging. I rinse the noodles in cold water for a few minutes, shake off as much water as possible, them spread them on a baking sheet. I bake them in a 250-degree oven for half an hour. This dries them out. I put them in the broth as Joe directs above and let them cook for a few minutes. The noodles absorb the chicken broth flavor and soften with no trace of any packaging flavor.

It's great for those with diabetes and those wanting to loose weight. I've been using the shiataki noodles from Kroger and they're fire! I make it with my homemade chicken broth, vegetables, chili paste, seasonings and any meat. The only issue is it's expensive. I have to use shreds of cabbage to "stretch it out." Does anyone know where to get it cheaper in the U.S.?

I will try. It’s probably good. The way I get rid of the funky smell is to rinse them a couple of times and then boil them for 10 minutes. Yes they are more expensive but Shirataki noodles are very low cal and good for you, which ramen is not. When you worry about an upfront cost on better food think of what hospital bills, lost income, medicine costs, etc. costs down the road from poor health.

Don't forget the Sesame oil! A drop or two isn't a lot of calories
