3 ingredient quinoa crunch bars! They’re gluten free, dairy free, and refined sugar free, and so easy to make.
Ingredients:
•9oz dark or semi-sweet chocolate (I use dairy free and refined sugar free chocolate)
•1 cup puffed quinoa/quinoa pop
•1 tbsp coconut oil (or sub 3-4 tbsp nut/seed butter if preferred)
Instructions:
1. First, melt the chocolate and coconut oil together (in the microwave or on the stovetop using the double boiler method). If using a nut/seed butter instead of coconut oil, melt the chocolate alone then remove from the heat and add in the nut/seed butter.
2. Next, add in the puffed quinoa and mix until well combined.
3. Pour the mixture into an 8x5 loaf pan lined with parchment paper and place in the fridge for several hours (or overnight) to allow the chocolate to harden. I like to sprinkle the top with flaky seat salt before placing in the fridge, but that’s totally optional!
4. Once the chocolate has hardened, remove from the fridge and slice into bars. I find it helps to let the chocolate sit out and soften for 10-15 minutes before slicing.
5. Store leftovers in the fridge or freezer.
