Ube halaya or halayang ube is a Philippine dessert made from boiled and mashed purple yam. Ube halaya is also used in pastries and other desserts such as halo-halo and ice cream. It is also commonly anglicized as ube jam, or called by its original native name, nilupak na ube.

Ingredients:
1kg Purple yam
1 cup Coco Sugar (add more if you want too sweet)
1/2 cup Condensed Milk
1/2 cup Glutinous Rice Flour
75g Unsalted Butter
1/2 tbsp Homemade Vanilla Extract
2 cup Carabao's Milk

carabao's milk is difficult to find..any alternative?..what about milk in can, evap o condensed? or fresh milk?..and the sugar is it ok to use the common sugar in the market or grocery?thank you

I prefer the purple yam to be mashed after grated but that's fine as well

I understand the need to use ingredients to be authentic but here in the U.S. it'll be impossible to find carabao's milk. Cow's milk, although doesn't taste the same as carabao's milk is my only option :(
