Shami Kababs Recipe
Ingredients:
Cumin seeds 1 tbsp
Star anise 2
Black cardamoms 2
Whole red button chilies 5-6
Green cardamom 3-4
Boneless chicken 800 g
Onion (sliced) 1 cup
Ginger garlic paste 1 tbsp
Soaked split chickpeas 2 cups
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Turmeric powder 1 tsp
Salt 1 tbsp
Water 4-5 cups
Green coriander (chopped) 1 cup
Green chilies (chopped) 2 tbsp
Garam masala powder 1 tbsp
Chaat masala 1 ½ tbsp.
Beaten eggs as required
Oil (for frying) as required
Directions:
1. In a pot heat oil and add cumin seeds, star anise, black cardamom, whole red button chilies, green cardamom and sauté for a minute.
2. Add chicken, onion, ginger garlic paste and cook until chicken changes color.
3. Add soaked split chickpeas, red chili powder, coriander powder, turmeric powder, salt, water and cover and cook until chicken is fully done and water dries out.
4. Now mash this mixture well into mortar and pestle.
5. Transfer this mixture to a bowl and add green coriander, green chilies, garam masala powder, chaat masala. Mix it well and make kabab shapes from this mixture.
Note: They can be frozen for up to 1 month
6. Dip these kabab in beaten eggs and shallow fry each side for 2-3 mins.
7. Your Chicken Shami Kabab are ready. Serve and enjoy.

Cooking time: 35-40 mins
