If you want to cook big pieces of chicken like that on tawa or frying pan, better cook it on slow flame and cover it so that the trapped steam helps tenderize the chicken. It's like pressure cooking. I made tandoori chicken in frying pan using same cut of chicken with steam cooking technique. Adding 3-4 tbsp water and covering it also helps in tenderizing.
