PLAY IT BY EAR means wait and see, and decide later what you will do.

Examples:
I will either go to the zoo or see a movie this weekend. I'm going to play it by ear, and decide depending on the weather.

My sister is coming for a visit. I'd like to take her out for dinner, but I'm not sure what kind of food she will be in the mood for, so we'll just play it by ear and decide after she arrives.
