The softest summer rolls, you can make these with blackberries or raspberries. I made these using my favorite heritage flour from SunriseFlourMill.com for added flavor & nutrition. Heritage flour comes from varieties of wheat that were around before wheat was genetically modified in the 1950’s. It makes for a more nutritious and easier to digest flour, compared to modern wheat. Many people who are gluten sensitive can fully enjoy this flour, which is why I love it. You can use my code Lucymakes20 for 20% off their website if you want to try it! (Makes 1 pan)
For the bread:
- 1 and 2/3 cups water
- 2 tsp yeast
- 1/4 cup maple syrup or sugar
- 3 and 2/3 cups flour
- 3 and 1/2 TBSP olive oil
- 2 tsp. Salt

For the filling:
- about 1 pint of berries
- 2.5 TBSP sugar (more if berries are tart)
- 1/4 cup softened butter
- The zest of one lime or lemon + a squeeze or two of juice
-Optional: if I have it on hand I add a bit of berry jam to increase the berry flavor (like maybe blueberry, raspberry, or mixed berry jam).

For the glaze:
- 1 cup powdered sugar
- 1 TBSP cream cheese
- 1.5 TBSP melted butter ***
- 2 TBSP milk
- 1 tsp vanilla
- 2 tsp. Pure maple syrup
-Optional: 3 mashed blackberries or raspberries to add color to the glaze

Note: if using active dry yeast, first combine the water with the yeast and sugar and let sit until bubbly, about 5-10 minutes. Then mix in the rest of your ingredients and proceed with the recipe.

Directions:
1. If using instant yeast, first combine all bread ingredients in a bowl. (See note if using active dry yeast). Mix well until a dough is formed.
2. Let dough rise in a warm spot until doubled (about 2 hours).
3. Mash your berries in a bowl. Mix in the zest of a lime and some juice. Taste it to see if it needs more juice.
4. Pour dough onto a well floured surface and roll it around so it's not sticky. Roll out into a large rectangle, about 1/2-3/4" thick.
4. Spread softened butter evenly to the edges of your dough. Sprinkle the sugar on top. Add mashed berries and spread evenly. Add berry jam if you’d like.
6. Roll dough from the shorter side of the rectangle. Cut into even slices (usually about 10-12 slices). Place in a well-buttered 9x13" pan and cover.
7. Preheat the oven to 350*F and let rolls rise during this time (usually about 20-30 minutes). Bake for 20-25 mins until lightly golden. Check for doneness at 20 minutes, cook longer if needed.
8. While cooking, combine all ingredients for the glaze using an electric mixer or whisk. Mix until smooth.
7. Top rolls with glaze after taking them out of the oven and let sit 5 minutes before serving. ENJOY:)
