Recipe of Trivandrum Chicken fry
Ingredients for the marination
Chicken 500 grams
Ginger garlic paste 1.5 tbsp
Turmeric powder 1/2 tsp
Kashmiri chilli powder 2 tbsp
Red chilli flakes 1 tsp
Chicken masala powder 1 tsp
Garam masala powder 1/2 tsp
Pepper powder 1/2 tsp
Lemon Juice 1 tbsp
Salt

For the Masala
Onions 2 sliced
Green chillies 4-5
Ginger chopped 1 piece, chopped finely
Garlic chopped 10-12 cloves sliced
Curry leaves handful
Coconut oil 3-4 tbsp

Method
1. Marinate the chicken with all the ingredients mentioned above for marination.
Keep for 2 hours minimum or overnight.
2. Heat a pan with some coconut oil, add the onions, curry leaves, ginger, garlic and green chillies. Saute for a few minutes. .
3. Add the marinated chicken pieces, saute for few minutes. Cover and cook until well done.
4. After 10 minutes, roast the chicken by drying up all the moisture.
5. Once the chicken is dry, switch off the flame.
6. Serve with lemon wedges, onions and curry leaves.
