Much easier to allow the plane to continue 50' over Desired altitude at Climb Power then Push over to achieve a descent to Desired altitude all the time picking up speed to or slightly above cruise speed, (Called Getting the Plane on the step). Then trim for Cruise. It's faster and easier this way at least in Real Full Scale Planes. STC won't holler at you till you go 250' above assigned altitude when IFR or a VFR assigned altitude. Try it in your Sym.
