Summer Drinks! Cold Brew Coffee & Sun Tea Iced Tea Recipe

In the heat of the summer, sometimes you want your favourite caffeinated drink, but you’d prefer for it to be cold! Here are two great ways to get your caffeine fix in a totally refreshing way.
The nature of cold brew coffee and sun tea is such that due to the slower extraction from the coffee beans and tea leaves, you will end up with a smoother flavour and even after long steeping time, you will not have the bitter or acidic off-flavours that are often associated with oversteeping these drinks when they are hot. We tend to brew both of these drinks very strong because they’re going to be served over lots of ice as long cool summer drinks. For the cold brew coffee you also may wish to add some milk or cream.
Feel free to use your favourite coffee blend, or your favourite brand of bagged tea for these recipes. If you have some fancier tea and some of those do-it-yourself tea bags, then feel free to use whatever sort of tea you would prefer. You can also toss in a few pearls of Jasmine tea to enhance the flavour of your bagged tea.
Cold Brew Coffee
Equipment:
● rolling pin (or coffee grinder)
● stout zipper lock bag
● glass jar
Ingredients:
1 cup fresh roasted coffee beans
4 cup room temperature water
Procedure:
1. Place the whole coffee beans in the zipper lock bag and crush them roughly with the rolling pin. Alternately, you can roughly grind them in a coffee grinder until they are just broken up, and not finely ground.
2. Place the coarsely ground beans into the glass jar and fill the jar with room temperature water.
3. Place the jar in the fridge and allow the mix to steep for several days (up to a week). Occasionally tap the jar to make sure any air bubbles are clear from the beans.
4. Pour the mixture through a coffee filter into a carafe.
5. Store the strained cold brew coffee in an airtight jar in the fridge for up to 2 weeks.
Sun Tea Iced Tea
Equipment:
● a large glass jar with a good sealing lid
Ingredients:
2 ea tea bags (per quart of water)
1 qt very cold water (or enough to fill the jar you have)
Procedure:
6. Place the tea bags into your glass jar.
7. Fill the jar with very cold water.
8. Place the jar on a stable shelf or ledge directly in the sun. Make sure that it will have exposure to the sun for several hours at least.
9. Allow the tea to steep for up to 6 hours in the sun.
10. Remove the tea bags and store in the fridge for up to two weeks.
